From the unexploited treasures. Table cheese, hard, yellow cheese with a strong and spicy flavor(reminiscent Italian parmesan) and tradition to every grain can compete famous cheeses.
It owes its name to San Michalis(San Mihalis) hill to the north side of the island and is made from cow’s milk with the same recipe for the past 50 years in the dairies of Syros. The milk is pasteurized, coagulates and salted until transferred to the molds where it is pressed to acquire shape. Followed by a second salting and then placed in brine. In the end, at a relative humidity aged for about four months.
The PDO* cheese San Michalis of Syros is special. It is one of the best and most expensive cheese in our country and is used in many recipes. Enjoy plain, fried, grated on pasta or even in pies.
